Chef Josh Dorcak of MAS Ashland 2017 Iron Chef of Oregon


  
This past weekend, some of Southern Oregon’s most talented Chefs competed at the Bite of Oregon in Portland, Oregon to become the 2017 Iron Chef of Oregon – Chef Billy Buscher of Seven Feathers Casino Resort (previously of Ashland’s Alchemy Restaurant & Bar and 2012 Ashland Culinary Festival Top Chef), competed to defend his 2016 Iron Chef of Oregon title against Chef Josh Dorcak of MĂ„S Ashland (2015 & 2016 Ashland Culinary Festival Top Chef).  The Bite of Oregon challenges Chefs who have won Competitions across the State to compete against one another at the State-level for the prestigious title of Iron Chef Oregon. For the third year in a row, Ashland has won the title.

Chef Dorcak competed and won two qualifying rounds to advance to the final round on Saturday evening against defending Iron Chef of Oregon, Chef Billy Buscher.  Chef Buscher partnered with Chef James Williams (previously of Omar’s Fresh Seafood and Steaks) as his Sous Chef.  Chef Williams is the 2015 Iron Chef of Oregon and 2014 Ashland Culinary Festival Top Chef. Chef Dorcak chose to partner with Chef Jason Coburn of Pastrami Zombie (Sammich Ashland’s sister property in Portland) as his Sous Chef – “Quite the duo of teams and collaborative Southern Oregon spirit showcased.” said Kelsey Frantz.      
 
In the final round of two, both teams were provided the following secret ingredients of which they had to incorporate into the dish: Rockfish, Dungeness Crab, Candied Ginger and Dried Cranberries.  The Chefs had 30 minutes to produce six plates.  While on stage, they were asked many questions and were mic’d to a live audience of foodies and Bite of Oregon ticket holders.  Members of the Ashland Culinary Festival Committee were in attendance and were excited to watch the competition take place.  
 
Ultimately, it was Chef Josh Dorcak and his Sous Chef Jason Coburn who won the final round. Dorcak’s winning dish pictured was Seared Rockfish, Cranberry, Tomato Ginger Vinaigrette and Dungeness Crab.

The four-day festival includes Mixology, Junior Chef and Top Chef Competitions, a Top Chef Dinner (of which Chef Dorcak will be preparing a course), Wine Tours, a NEW Celebrity Quick-Fire Challenge, Culinary Workshops, and over 30 delicious vendors from farms, restaurants, food artisans and award-winning wineries and breweries.  The Ashland Culinary Festival is produced by Travel Ashland.
